Instructables (http://www.instructables.com/tech) is a very nice web site that allows people to post their DIY home projects, and include instructions on how to make them. Their electronics section is one of a kind, and I highly recommend you check them out.
Cornell University has a nice collection of various projects created by their students using microcontrollers. From what I can see, they all used ATMEGA chips so check it out - http://instruct1.cit.cornell.edu/courses/ee476/FinalProjects/
http://www.obdev.at/products/vusb/prjhid.html#5 and http://code.rancidbacon.com/LearningAboutArduinoAVRUSB have some interested V-USB projects for ATMEGA microcontrollers
The arduino playground has plenty of resources on various project implementations http://www.arduino.cc/playground/Main/InterfacingWithHardware

Instructables is pretty good and make.com has some interesting stuff every once in a while.
